Cookies & Cream Cupcakes

Whoever said that nothing tastes as good as skinny feels clearly has never had a cookie & cream cupcake.

If you know me well enough,you would know I am obsessed with all things Oreo!

I could eat it all day.

So today,I wanted to make something a little special and incorporate my favorite cookies into a cupcake!

Well I must add,

My not-so-secret affair

 

For the recipe all you need are:

Cupcakes( makes 12)

  • 3 ounces of your favourite chocolate bar (chopped)
  • 1/3 cup  cocoa powder
  • 3/4 cup hot, strong-brewed coffee
  • 3/4 cup  bread flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon table salt
  • 1/2 teaspoon baking soda
  • 6 Tablespoons vegetable oil
  • 2 large eggs
  • 2 teaspoons white vinegar
  • 6 OREOS cookies (each cookies broken into 4 quarters)

1.Preheat oven to 350f/180c.Lined muffin tin with paper liners.For each of the liners,put in 2 quarters of OREOS as the base of your cupcake.

2.Combine the first three ingredients and whisk until smooth.Refrigerate the mixture until just chilled.This should take <30 minutes.

3.In a seperate bowl,combine the following four ingredients.

4.When the chocolate mixture has been cooled,whisk in the oil,eggs and vinegar.

5.Next,whisk in the flour mixture until just combined.

6.Feel each cupcake line until 3/4 full and bake for 15-18 minutes until cupcakes are firm to the touch.

7.Let it cool in the pan for 10 minutes and transfer it to a wire rack and let it cool completely before frosting.

Cream cheese frosting

  • 250g of cream cheese (softened)
  • 3/4 – 1 cup of icing sugar (sifted)
  • 50 g of butter (softened)
  • 2 tablespoons of milk
  • 5 OREOS (crushed)

1.Using an electric mixer,combine the first three ingredients and beat until the frosting is smooth.

2.Gradually add milk,1 tablespoon at a time until frosting reaches your desired consistency.

3.mix in the crushed OREOS and fold in until just combine.

4.When you cupcakes are cooled completely,you can start frosting.
